Great interview! It’s true, there are some cheapo shortcuts happening but luckily the Italian food culture is strong so they can be easily avoided with a little local know-how. (Obv Katie’s that local in Roma 😉)

yes! it definitely means you have to pay a little bit of attention. but still so many great options out there.

Can cosign. Not all Italian food is good. My partner is Italian and we spend lots of time there. 80% of our meals there are great, but there are also some real duds.
